Holiday meals are meant to be spent with loved ones and finished off with a sweet treat. To ensure all sweet tooth cravings are met this holiday season, keep this holiday recipe in mind.
Butterscotch Pudding with Bourbon Brown Sugar Meringue
Ingredients:
¼ cup butter
¾ cup firmly packed light brown sugar
2 tablespoons molasses
2 ¼ cups milk, divided
1 cup heavy whipping cream
½ vanilla bean
3 egg yolks
3 tablespoons cornstarch
2 teaspoons vanilla extract
¼ teaspoon salt
½ cup firmly packed light brown sugar
1 tablespoon bourbon
2 tablespoons water
3 egg whites
¼ teaspoon cream of tartar
Directions
Mix butter, molasses, and ¾ cups brown sugar in a medium saucepan. Cook over medium heat, stirring constantly until the sugar dissolves, about 5 minutes.
Mix 1 ¾ cup milk and whipping cream in a separate saucepan. Split the vanilla bean lengthwise. Scrape the seeds into the saucepan and stir in vanilla bean pod. Bring to a simmer over medium heat. Remove, throw away vanilla bean pod. Slowly whisk milk mixture into the sugar mixture.
Whisk together yolks, rest of the milk, vanilla, cornstarch, and salt in a small bow. Gradually stir in about ¼ of the hot mixture into yolk mixture, then add the yolk mixture into the rest of the hot mixture, stirring constantly. Cook over medium heat, stirring constantly for 20 minutes or until the sauce thickens. Remove from the heat. Pour into a 1-quart baking dish. Put plastic wrap directly onto the surface of the pudding and chill for at least 8 hours.
Mix ½ cup brown sugar, water, and bourbon in a small saucepan. Cook over medium-low heat until a candy thermometer reaches 235 degrees, about 7 minutes.
Beat egg whites and cream of tartar at high speed with an electric mixer until stiff peaks form. Slowly drizzle in hot brown sugar syrup, beating at high speed for 2 minutes, or until glossy and thick. Mound the meringue over the chilled pudding, forming peaks with the back of a spoon. Broil 8 inches from heat until meringue is browned.
