
Holiday Recipe

As you are preparing for all of your holiday festivities, it is the perfect time to find a delicious, new recipe that the whole family will enjoy. Try this chocolate dipped coconut macaroons recipe as the perfect after dinner treat.
Ingredients
- 1, 14 ounce bag sweetened shredded coconut
- 7/8 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 large egg whites
- ¼ teaspoon salt
- 4 ounces semi-sweet chocolate chips
Directions
- Preheat your oven to 325 degrees. Set the oven racks in the upper and lower thirds of your oven. Line two baking sheets with parchment paper.
- Mix together the vanilla extract, shredded coconut, and sweetened condensed milk in a medium bowl and set aside.
- Beat the egg whites and salt with an electric mixer until stiff peaks form. Use a large rubber spatula to fold the egg whites into the coconut mixture.
- Use two spoons to form heaping tablespoons of the mixture into mounds on the prepared baking sheets about 1 inch apart. Bake for 25 minutes, or until the tops are lightly golden and the bottom edges are lightly browned.
- Melt the chocolate in a microwave safe bowl, stopping and stirring at 30-second intervals, until smooth and creamy. Dip the macaroons into the chocolate, letting any excess chocolate drip back into the bowl, and place back on the baking sheet. Put the macaroons in the refrigerator for 10 minutes to allow the chocolate to set.
